- 2 eggs
- 1 cup sugar
- 1 cup sifted flour
- 1 teaspoon baking powder
- 1/2 cup boiling water
- 2 teaspoons lemon flavoring
Beat eggs, add sugar, then half the flour, then the rest of the flour, to which has been added 1 teaspoon baking powder. Add boiling water and flavoring. Bake in a rather hot [400°F] oven 20 minutes.
The Rich Chocolate Icing on the icing page was intended for a sponge cake. Or you could use this cake in an Apple Charlotte or a trifle.

Carol's box of Jeffs recipes included an Orange Sponge from cousin Louise Lockhart. If you save one egg white as she directs, you could make white icing.
- 3 eggs
- 1 cup sugar
- juice of 1 orange, plus enough water to make 1/2 cup
- 1 1/4 even cup pastry flour
- 1/2 teaspoon baking soda
- 1 teaspoon cream of tartar
- salt
Separate eggs, reserving 1 white for the icing. Beat the yolks until creamy. Add sugar gradually, then orange juice and water. Beat until the mixture bubbles. Add flour gradually [with soda and cream of tartar], then fold in the beaten whites of two eggs.
Bake 30 to 40 minutes. [I would use a moderate oven, about 350°F]
